Today, we'll be exploring a delicious egg and plantain frittata recipe that is sure to become a favorite in your kitchen. 🍳🌱

Ingredients:
Plantains: 4 (3 ripe and 1 unripe)
Eggs: 6
Sausage: 1 (optional)
Carrot: 1 (optional)
Red and green bell peppers: 1 each
Groundnut oil
Seasoning
Onions: 1
Tomatoes: 1
Fresh pepper: 1
Salt to taste



Equipment:
Frying pan
Chopping board
Frying spoon
Knife
Bowl
Whisk or spoon


Preparation:
Wash, peel, and slice plantains into circles or any desired shape. Sprinkle with salt.

Pour some oil into your frying pan and allow it to heat up. Gently add your sliced plantain into the hot oil and fry until golden brown.

 Set aside, being careful not to let it burn.

Chop the onions, bell peppers, fresh pepper, carrot, tomatoes, green peppers, and sausage.

Crack your eggs into a bowl and whisk thoroughly.

In your frying pan, add 2-3 tablespoons of groundnut oil. Add your onions and stir for a minute, then add your carrot, tomatoes, bell peppers, and stir.


Add your seasoning and salt to taste, then add your sausage. Stir continuously to prevent burning.

In the bowl of already cracked and whisked eggs, add the fried veggies and fried plantain, and mix well.

Transfer your mixture into the frying pan. For a more appetizing appearance, sprinkle some more veggies like sliced red and green bell peppers on top.

Place your frying pan on your cooker and let it cook on low heat for 20-25 minutes. Your delightful egg and plantain frittata is now ready to enjoy! 🎉🍴🍴
