Achieving the ideal Nigerian-style fried rice is all about balance and technique. Here are some helpful pointers to ensure your dish turns out delicious and satisfying:

Spice it up: Feel free to add a dash of cayenne pepper if you enjoy a bit of heat in your fried rice.

Cook rice al dente: Avoid overcooking your rice before frying to prevent a soggy final product. Al dente rice ensures a better texture when fried.

Maintain veggie crunch: Preserve the crunchiness of your veggies by not overcooking them. This adds an enjoyable texture to the dish.

Use assorted veggies: A mix of vegetables such as carrots, sweet peas, sweet corn, green beans, and sweet bell peppers can create a colorful and tasty combination.

Ingredients:

2 cups cooked parboiled rice

1 cup mixed vegetables (carrots, sweet peas, sweet corn, green beans)

1 cup diced onions

2 scallions

1 cup cubed beef liver

1/2 teaspoon thyme

1 teaspoon curry powder

1/2 cup chicken stock

1 stock cube

3 tablespoons oil for frying

Salt to taste


Directions:

Cook the parboiled rice in the stock until the liquid has evaporated.

Preheat oil in a pan, then add onions and fry for a minute or two.

Add scallions, mixed vegetables, and seasonings (thyme, curry powder, salt, and stock cube) to the pan.

Throw in the cooked rice and stir-fry for about 3 to 5 minutes.

Remove from heat and serve hot.
